Datanlí is produced by medium and small-scale producers from close to Datanlí, a small town inside the municipality of Jinotega. Its name comes from the mountains that form part of the nature reserve Datanlí- El Diablo. Datanlí is an indigenous word that means “where waterfalls.”
This region is one of the richest and most diverse ecosystems in Jinotega, a place with beautiful and impressive forests and where water sources that originate at the top of the mountains flow all the way down to the farms of countless coffee growers that lie below. The water that falls from Datanlí help these producers, matched with the favorable climatic conditions and the hard work, to produce outstanding specialty coffees.
Traditional fully washed in micro-mills at each farm. Fermented in cement tanks for 14-24 hours.
