HISTORY

Huila is the largest specialty coffee producing region in Colombia. However it is not only known for the quantity it produces, but also for the amazing quality of the coffees. Huila is a mountainous department that lies in the southwest of the country between the Eastern and Central mountain ranges, in the Colombian Massif, where these meet. Huila is important for many reason. Firstly, the Magdalena River, Colombia’s largest river, is born there. Secondly, the Nevado del Huila, Colombia’s third highest peak is located in the region and its snow capped tops can be seen from miles away. But most importantly for us, Huila was the birthplace of specialty coffee in Colombia.

In 2013, Huila coffee received the Denomination of Origin status. Over the last few years, there have been several Cup of Excellence winning lots produced in Huila. Huila’s flavor profile is influenced by its special topography and climatic conditions. Its coffee is characterized with juicy acidity, perfect sweet balance, and mild citrus. The fertile soil and the richness of mineral resources in Huila help boost the agricultural industry. In this department, they also grow rice, raise cattle, and farm fish.

Fully-washed process and traditionally fermented for 14-24 hours, in micro-mills at each farm.

Shade

Semi-shaded with plantain and Nogal trees.

Drying Method

Fully sun-dried at each farm in covered parabolic and roof-type drying patios.
